This is an approximate list of the cuts of meat produced by a quarter of beef.
Every beef works up slightly different, especially when they are custom cut.
Unless requested otherwise, beef steaks are cut approximately ¾ inch thick because most of our customers prefer this thickness.
Having steaks cut thicker or thinner will sometimes vary the number actually received.

* 1 porter house steak (1 per pkg.) or approx. 3-4 filets

* 22 (1#) packages hamburger
* 2 stew meat
* 4 packages short ribs
* 4 soup bones
* 4 packages liver (you do not have to take, but are welcome to it)

As the seasons change, along with the market, we try to keep packages available for pick-up and delivery. However, there are times when we need to allow 2-3 weeks from order placement to delivery date.
The locker generally processes the meat on Friday and it needs to hang for about 10-14 days prior to cutting.
TO GUARANTEE TIMELY AVAILABILITY OF YOUR BEEF YOU MAY MAKE A DEPOSIT OF 50% DOWN. WHILE THIS IS NOT MANDATORY IT WILL GUARENTEE YOUR BEEF TO BE RESERVED FOR YOU. THE ONLY TIME WE DEMAND A DEPOSIT IS IF YOU HAVE SPECIAL CUTTING INSTRUCTIONS SUCH AS ONE INCH THICK STEAKS OR YOUR HAMBURGER ALL BEING MADE INTO PATTIES.
We also ask that you please give us 24 hour notice for picking up the meat at the locker so that my wife or I can meet you there to help load the meat into your vehicle.
The price is approximately $550.00 for the quarter and processing is included. Delivery fees may apply if the locker makes the delivery on our behalf.
